VEGAN VANILLA BEAN MUFFINS

1. Pre-heat the oven to 350F.
2. Toast the vanilla bean just a little bit to make it crisp.
3. Blender the vanilla bean into tiny bits.
4. Mix flour, baking power, salt, and vanilla bean bits to a bowl. Set aside.
3. In a large bowl, beat apple cider vinegar and canola oil until well blended.
4. Add sugar to the bowl and mix well. Add apple sauce and water and mix well.
5. Add the wet ingredients to the bowl of dry ingredients. Mix until blended.
6. Spoon the mixture to the oil sprayed muffin baking dishes.
7. Bake for about 15 minutes.
Vanilla beans offer much more lovely aroma than vanilla oils on the store shelf.
