VEGAN RICE FLOUR STEAMED CUPCAKES
Rice four 100g Corn starch 20g Baking Powder 2 tsp Chocolate Chips 35g (Semi-Sweet Chocolate Mini Chips Enjoy Life) Chocolate Chips 160g (Semi-Sweet Chocolate Mini Chips Enjoy Life)Chocolate Chips 160g (Semi-Sweet Chocolate Mini Chips Enjoy Life)Maple syrup 2 tbsp Sugar 35 g Warm water 135cc Vanilla Extract 1 tsp Apple cider vinegar 1 tsp *No peanuts, tree nuts, milk, eggs, soy, wheat |
1. Prepare the steamer. I used my largest frying pan with a lid. Cover the lid with a kitchen clothe and duct tape it.
2. Place a heat resistant container inside the pan, making sure it will fit. Pour water enough for steaming. Container may float and that is OK.
3. Mine could fit 8 cupcake molds and so this recipe will give enough to make 8 cupcakes. Spray oil inside the molds.
4. Combine sugar and warm water. Mix until sugar dissolves. Add apple cider vinegar and maple syrup. Mix well and set aside.
5. Start the heat on high to boil the water for steaming.
6. Mix rice flour, corn starch, and baking powder. Shift together.
7. Pour the wet ingredients over the flour mixture and mix with spatula. Add chocolate chips just before you get your complete mixture.
8. Spoon your mixture to the cupcake molds. Silicon molds works well on this recipe.
9. Cover with the lid and steam about 12 - 15 minutes.
The key is to have your steamer ready when your mixture is ready.
Moisture drops on cupcakes are a destroyer, and so clothe on the lid is essential for it can catch all the unwanted drops.
