VEGAN VANILLA CUPCAKES WITH STRAWBERRY FROSTING
*This recipe uses wheat Cupcakes All purpose flour 260g Baking soda 1 tsp Baking powder 2 tsp Salt 1/2 tsp Canola oil 1/2 cup Sugar 200g Water room temperature 1 and 1/2 cup Apple cider vinegar 1 tbsp Vanilla extract 1/2 tbsp Strawberry Frosting (enough for about 20 cupcakes) Strawberries 1 cup Shortening 150g (I use Butter Flavor Shortening from Spectrum) Confectioners' sugar 300g *No peanuts, tree nuts, milk, eggs, soy |
Cupcakes
1. Preheat the oven o 350F. Spray oil to the cupcake cups or place your paper cupcake liner to the cupcake pan.
2. Combine flour, baking soda, baking powder, salt and mix well. Set aside.
3. Place canola oil, sugar, water, apple cider vinegar, and vanilla extract in a bowl and mix well.
4. Pour the liquid to the bowl the flour. Fold together until combined.
5. Spoon the prepared cups, about 70% full.
6. Bake about 15 minutes.
7. Let them cool until safe enough to touch, about 5 minutes. Remove from the pan and let them cool completely.

Strawberry Frosting
1. Using blender, puree the strawberries.
2. Cook the puree on medium heat, until reduced in half. Add salt and mix. Remove from the heat.
3. Beat shortening until fluffy.
4. Add half of sugar into shortening, little by little.
5. Add two spoon full of puree and beat.
6. Add rest of the sugar and beat.
7. Add two spoon full of the puree and beat.
