1. Boil the string beans. Saute with minced garlic and taste with salt and pepper. Set aside.
2. Mix the flour and curry powder.
3. Sprinkle salt and pepper over scallops.
4. Warm the pan to medium-high. Pour canola oil to lightly cover whole surface of the pan.
4. Dip the scallops into the flour mixture to coat the surface.
5. Making sure your oil is hot, place the scallops to the pan, aiming oil. CAUTION. Oil may jump.
6. Turn the scallops if bottom surface is nice and crisp and brown. Repeat.
