BEEF PATTY WITH REFRESHING SNOWFLAKES SAUCE
Beef Patty Ground beef 6 patty Bread of your choice 1 slice (or omit and add extra 1 tbsp potato starch) (or omit and add extra 1 tbsp potato starch)Water 1 1/2 cups Onion 1 Vegetable soup powder 1 tbsp Sake or white wine 1 tbsp Salt and pepper Potato starch 3 tbsp Sauce Daikon radish grated 250g Soy Sauce 4 tbsp Sake or white wine 4 tbsp Vinegar 2 tbsp Lemon Juice 1 tbsp Green onions 4 stems Shiso leaves (optional) * You can freeze the uncooked meat mixture in a ziplock about a month. *No peanuts, tree nuts, milk, eggs, wheat |
Patty
1. In a large bowl, combine the the bread and water and soak the bread.
2. Using blender, make onion into a puree. Add the puree to the bowl.
3. Add ground beef, ketchup, vegetable soup, salt and pepper, and mix very well with hand.
4. Add potato starch the last and mix some more.
5. Saute the patty in medium heat. As you place the patty to the pan, press middle of the patty with a finger to make a dent.
6. Turn the patty and cook on the other side.
7. Pour sake or wine to the pan and cover until well heated. Remove from heat.
8. Gather the liquid in the pan to a small sauce pan.
Sauce
1. Grate daikon radish.
2. Take about 3 tbsp of grated daikon radish to your palm and hold gently to remove some of the liquid for garnishment later. Repeat as needed.
3. Add soy sauce, sake or wine, vinegar, lemon juice, and grated daikon radish to the sauce pan with patty liquid.
4. Heat on high. Add green onions.
5. Remove from the heat just before boiling point.
Serve over patty and garnish.

Want to pack as your bento?
Changing the sauce is a good idea for it will give you different flavor.
It is especially nice on this recipe because soupy sauce is not ideal for bento. It can leak. Yuck.
Mix 1 tbsp mayo substitute and 2 tbsp ketchup. Dip your patty and pack!
