OCTOPUS AND BROCCOLI SALAD
Salad Small Octopus 1 package Broccoli 1 Salt (for boiling) 1 tbsp Dressing Olive oil 3 tbsp Vinegar 3 tbsp Anchovy fillet minced 6 Garlic 1 clove Basil leaves 6 Salt 1 tsp Sugar 1tbsp Pepper * You can use Sale Profumato in a place of regular salt *No peanuts, tree nuts, milk, eggs, soy, wheat |
1. In a medium size bowl, mix vinegar, sugar, minced garlic, and salt and pepper. Mix well.
2. Add olive oil slowly as you mix the dressing. Mix very well.
3. Add minced basil leaves and minced anchovies to the dressing. Set aside.
4. Boil broccoli with 1 tbsp of salt. Drain and set aside. Do not discard the boiled water.
5. Using the same boiling water, boil the small octopus. You can cut them into small sizes if you like. Drain.
6. Toss the broccoli and octopus into the dressing. Blend well. Serve as is or chilled.
