1. Wet the uncut, unpeeled Japanese yam and wrap it with very wet paper towel.
2. Microwave the wet yam together with paper towel on a plate about 10 minutes in power 70%.
3. When ready, peel the yam with hand (it's hot!) and cut into chunks.
4. Seed the cucumber and cut into chunks. Sprinkle salt over cucumber chunks.
5. Cut peaches into chunks.
6. Mix all the ingredients in a bowl and add mayo, mix some more.
