EGGPLANTS AND HAM WITH LEMON SOY SAUCE
Eggplants sliced 3 Ham sliced 5 (you can use left over from making bento) Green onions chopped half a bundle Soy sauce 3 tbsp Lemon juice 1 tbsp Rice vinegar 2 tbsp *No peanuts, tree nuts, milk, eggs, wheat *No peanuts, tree nuts, milk, eggs, soy, wheat |
1. Slice your ham and eggplants. Put your eggplants to the water with vinegar to stop the discoloration.
2. Wash your eggplants and steam them, about 20 minutes. They should be extra tender.
3. Mix the soy sauce, lemon juice, and rice vinegar. Set aside.
4. Sprinkle the ham and chopped green onions on top of eggplants.
4. Pour over the soy sauce mixture generously.
If you have time, you can refrigerate the steamed eggplants and serve as chilled.
