1. Mix together brown rice flour, shortening (cut into small cubes,) and sugar with a pastry scraper.
2. Add maple syrup and vanilla extract to combine. Stop while still little lumpy.
3. Place on a plastic wrap and shape into a square bar. You may place the wrapped bar into a small loaf pan, place a card, and stuff with paper towels to shape a square bar.
4. Refrigerate about 1 hour

6. Place a cookie sheet on the working surface.
7. Unwrap the cookie dough and place it on the working surface.
8. Using a knife, cut the cookie dough into cubes about 1 x 1.
9. Lift the cookie squares to the oven tray holding the cookie sheet. Bake for 15 minutes.
