Sauce
1. Peel the tomatoes, discard the seeds, and cut them into dice.
2. Squeeze orange juice
3. Heat the orange juice and minced shallot until the juice is almost gone.
4. Add diced tomatoes, salt and pepper, and saute until very soft.
5. Puree the tomatoes in a blender.
Scallops
1. Cut the bacon to small size.
2. Saute the bacon in medium heat. Set aside leaving the oil in the pan.
3. Bring the heat to medium high, making sure the pan and oil is hot.
4. Sprinkle salt and pepper on the scallops.
5. Place scallops in the pan. CAUTION. Oil may jump.
6. Turn the scallops after its bottom turns brown. Do the same for the other side. Do not over cook.
