Marshmallows
Isn't it fantastic that you can actually make your own marshmallows?
Without egg whites? Here are some recipes that do not require egg whites and still taste heavenly yummy! Special Thanks and Acknowledgement I was overjoyed when I found this book, MARSHMALLOW MADNESS! by Ms. Shauna Sever. My marshmallow recipes are mainly from her book, with just some hints of what I like. If you like my marshmallow, you will love her book. **You need stand mixer and candy thermometer ** see below |

Here are my favorite gadgets in marshmallow making.
4.5-Quart Tilt-Head Stand Mixer from Kitchen Aid
and
Candy Thermometer from Taylor Thermometers
Stand Mixer is wonderful for its powerful and sturdy mixing job.
It's also nice to have some freedom rather than holding hand mixer for about constant 12 minutes.
Candy thermometer is a very important tool because in marshmallow making, temperature decides everything.
Molds are also handy in marshmallow making.
I'm using non-stick mini loaf pan for layered marshmallows and 8 inch square baking pan for my regular marshmallows.
You can also use silicon molds for chocolates and candies with small hearts, stars, etc.
Spatula is a must to constantly stir the sugar syrup and to transfer the marshmallow to the mold.
